Crockpot Apple Cinnamon Oatmeal

Enjoy a warm bowl of oatmeal, ready as soon as you wake up! This overnight crockpot recipe is so easy and tasty, it will satisfy everyone.

IngredientsCrockpot Oatmeal 2

-2 apples, cored, sliced into ½ inch pieces

– 1 can (13.4 fl oz) of coconut milk (or 1.5 cups of regular milk, almond, etc)

-1.5 cups of water

-1 cup steel cut oats

-1 tablespoon of coconut oil

-1 teaspoon of cinnamon

-1 tablespoon of ground flax

-1/4 teaspoon of salt

-1-2 tablespoons of brown sugar (optional)

– Optional garnishes: chopped nuts, raisins, dried fruit, honeyCrockpot Oatmeal

1.     Either coat the entire inside of your crockpot with cooking spray. Or spray a heat-proof bowl that can be placed inside your crockpot, like a double boiler.

2.     Add ingredients to the slow cooker or bowl. If using the bowl, add in water in between crockpot and bowl to fill up to mixture. Cook on low for 7-8 hours. If using the double boiler method 8-9 hours is perfect. If using just the crockpot, more like 7, being careful it doesn’t burn.

3.     Add toppings if desired. Store leftovers!

Jessica is a 2011 graduate from Michigan State University with a Bachelors of Science in Kinesioloy specializing in Exercise Science. She is a certified personal trainer through the National Academy of Sports Medicine (NASM). Jessica completed her MSU internship at State of Fitness in the Spring of 2011. Under the supervision and guidance of Justin Grinnell and Rebecca Klinger, Jessica gained valuable experience in training clients. Jessica is a long-distance runner, completing many road races ranging from 5k to marathon. This October the Chicago marathon will be her third 26.2 mile race. Jessica played varsity soccer and volleyball throughout high school. She has also completed triathlons and adventure races. Having a passion for an active and healthy lifestyle led Jessica to join the State of Fitness team! She hopes to pass on her love for fitness onto all of her clients.

  1. Jessica, looks and sounds yummy. I will try this. A couple of questions… How many servings does this make? For leftovers, do you need to add additional liquid or just microwave? Why steel cut oats? Also, will the flax maintain nutritional value when cooked? Always wondered about that. Thx! ~val
